Growing up in Mexico I have very fond memories of “mole” a traditional Mexican dish that is made up from a number of sauces and chocolate. This authentic Mexican signature plate originates from Puebla and Oaxaca and it is a traditional food item that has been passed down for generations to Mexican families. More than simply being a staple dish within many Mexican households it’s actually a conduit for passing on tradition, culture and appreciation for authentic gastronomy.


I recall vividly the times I would step into my grandmother’s home in Zacatecas, Mexico and her small adobe home smelled like “mole”. This dish was usually cooked for very special occasions because it was a dish that took time to make from scratch. It was quite a lengthy and attention-to-detail process from what I remember. Some of those occasions consisted of birthdays, anniversaries, weddings and holidays such as Christmas.

To this day I still eat “mole” and there are very few places that I love here in Los Angeles, CA. The other day I was craving it so much that I decided to do some research on how I could prepare it and I came across DOÑA MARÍA® mole paste. Since I was the one with the craving I was tasked at home with preparing it for my fiancée and I think I did great for being my first time preparing “mole”.

Since it was a weeknight when I decided to cook “mole” I decided to go for a less time-consuming dish therefore I chose quick and easy “mole” tostadas. In addition, were a busy and fit couple that is always on the go so I wanted something that was fast yet a dish that would not jeopardize our health. Below is my Healthy Tasty Tostadas recipe:


  • 2 cups of cooked and shredded chicken.
  • 1 jar of DOÑA MARÍA® mole paste
  • 1 avocado (optional/missing in this recipe)
  • 2 cups of chicken broth
  • ½ purple onion
  • 5-10 tostadas
  • sesame seeds
  • pinch of Himalayan salt
  • pinch of oregano


  • In a medium sauce pan cook chicken w/ onion, oregano and Himalayan salt.
  • Add chicken broth and DOÑA MARÍA® mole paste in a small pot. Heat over medium low stirring gently until the mole paste dissolves and the sauce is thick.
  • Remove sauce from heat and add to shredded chicken, mixing until well combined.
  • To assemble the tostadas put a layer of shredded chicken.
  • Top with w/ fresh purple onions.
  • Sprinkle sesame seeds.
  • OPTIONAL: Add diced avocados.
